Berry Omega Breakfast Muffins

Muffins are a favorite at our house. We love them for breakfast, and snacks.

I always make a double batch and freeze them for later.

INGREDIENTS
• 1 cups oat flour*
• 1 cup spelt flour*
• 1/4 cup ground flax
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 1 teaspoon organic vanilla extract
• 4 tablespoons organic and raw coconut oil

• 1 cup almond milk
• 1/2 cup apple sauce
• 1/2 mashed banana
• 2 tablespoons agave nectar
• 1 1/2 cup fresh or frozen blueberries
• 1 teaspoon ground cinnamon

*Optional: use 2 c glutenfree flour instead

Optional: Fresh strawberries for garnish

DIRECTIONS:
1.) Preheat oven to 375°F

2.) In a large bowl, combine almond milk, oat and spelt flour, flax seed, baking powder, salt, and cinnamon then mix together well.

3.) Add apple sauce, melted coconut oil, and agave nectar.

4.) Mix gently until just combined. Fold in blueberries.

5. Line a 12-tin muffin tray.

6.) Fill each spot about 3/4ths of the way full with muffin batter.

7.) Place into the oven for 25-35 minutes until puffed, golden brown (insert toothpick and make sure it comes out clean to know when they are ready). Garnish each with one hulled fresh strawberry.

8.) Allow to cool and enjoy!
Store in an airtight container or zip lock bag for up to 4 days.
