Broccoli Slaw

Broccoli slaw KRThis is a simple way to use your root vegetables, especially your broccoli stalks, you know, the part that is chopped off from the florets and usually thrown away. The stalk is full of great nutrition and can be used in this simple slaw.

Ingredients:

5 broccoli stalks

1 cup purple cabbage, thinly sliced

1 cup carrots, thinly sliced
1/2 cup red onion, thinly sliced

1 T chopped cilantro

1 T lime juice

1T olive oil
Optional: 2T chopped nuts (almonds), 1/4 cup raisons, 1/4 cup pumpkin seeds

Directions:

Wash all vegetables thoroughly.

Peel the broccoli stalk with a vegetable peeler, then cut the stalks into match-stick size pieces. Chop all vegetables the same, then combine in large bowl. Add the lime juice and olive oil. Mix well. Add sea salt to taste.

Garnish with almond slices, raisins, or pumpkin seeds if desired.
