Date Berry Protein Balls

I love protein balls for quick, easy, and deliciously healthy treats!

I make a bunch, and freeze them so I always have them on hand when I need a snack.

Here is a recipe for one of my favorites for you to enjoy.

 

INGREDIENTS
• 2 cups walnuts
• 1 cup shredded unsweetened coconut
• 2 cups soft Medjool dates, pitted
• 2 tablespoons organic and raw coconut oil

• 1 teaspoon Himalayan pink salt
• 1 teaspoon organic vanilla extract
• 1 scoop vegan protein (berry or vanilla are preferred)

DIRECTIONS:
1.) In a large food processor with an “S” blade, process the walnuts and coconut until crumbly.

2.) Add in the dates, coconut oil, vanilla and sea salt, protein powder, and process again until a sticky and uniform mixture is formed.

3.) Scoop the dough by heaping tablespoons, then roll between your hands to form balls with shredded coconut.

4.) Arrange them on a baking sheet lined with parchment paper.
5.) Place in the freezer to set for at least an hour before serving.
6.) Store the balls in a sealed container in the fridge for up to a week (or freezer for longer shelf life).
