Simple Beet Salad with Arugala

shutterstock_beets-stems-dirtBeets are a wonderful root vegetable and can be enjoyed in a variety of ways. I love to juice them and roast them. I also love them on salads. Enjoy this delicious simple beet salad with arugula, grapefruit, and simple homemade dressing.

Ingredients:

1 large red beet

1 large golden beet

1 jalapeno, seeded

3T lemon juice

2T lime juice

1 1/2 T raw organic honey

1/4 tsp pink himalayan salt

1/4 tsp fresh pepper

1/2 c extra virgin olive oil

3 cups arugala

3 cups endive

1/4 c almond slices

1/2 c feta cheese

1 grapefruit, peeled and segmented

Directions:

Preheat oven to 350 degrees. Wrap each beet wth aluminum foil. Bake until tender–60 to 90 minutes.

Blend in high speed blender: Jalapeño, lemon juice, lime juice, honey, salt, pepper; slowly add olive oil. Remove and reserve 1/4 c dressing.

Remove beets from oven, unwrap and peel.

ProTip: An easy way to peel beets is to use a paper towel to rub off the skins. The lightly abrasive texture of the paper towel scrubs off the outer layer without damaging, or wasting, any of the beet flesh.

Dice beets, toss with reserved 1/4 c dressing. Chill in fridge for about 15 minutes, until cold.

Add to beets: arugula, endive, almond, feta cheese, grapefruit segments and remaining dressing.

Toss to combine, serve and enjoy!
