Chocolate Protein Pudding

And I love pudding.

It reminds me of childhood and  yummy afternoon school snacks. Plus, it’s just really fun to eat.

Like most of my healthy snacks, I like to superfood them with nutrition to boost my health–So I can enjoy my healthy indulgences!

Of course, making healthy treats for my kids makes me a happy momma, too.

 

Ingredients:

2 scoops vegan chocolate protein powder

2 tsp raw organic honey, grade B maple syrup, or vanilla extract

2 T almond butter

1/2 c cacao

1/2 c coconut milk—adding 1 T at a time to desired consistency.

Add protein powder, cacao, honey, and almond butter to a small bowl.

Mix to incorporate. Add the coconut milk a little at a time.

Continue to stir until the ingredients become smooth and creamy.

Put the pudding mix in the fridge for 1 hour (or freezer for 25 minutes).

ProTip: Since some protein powders are thicker than others, you may need to add more coconut milk, 1T at a time until desired consistency is reached.

ProTip: Always make sure your nut milks are carrageenan-free (carrageenan is an ingredient you need to avoid–it is used as a thickener, but it can lead to leaky gut and digestive problems).

Serve with a dollop of coconut whipped creme.

Then enjoy!
